Delicious Kale salad!

On my INSTAGRAM account I was chatting a little about CHOICES and how we have to make them all day everyday ALL THE TIME. It can be frustrating but it can also be empowering to have the CHOICE in our hands daily to be our best, or to just get by.

Let’s chat about the SALAD!
My girls LOVED this salad, all 3 came back for seconds! YAY! And YES, they all eat kale – the dressing and the things mixed in with it balanced the kale out with sweetness.

I always get asked how I get my girls to eat healthy and the truth is that I don’t think I ever made food, veggies etc a BIG deal, we always just served it from when they were little. I don’t “force” them to eat things they don’t like, however, I never cook different foods AND I always make them try a little piece. I do however learn what they like, for example, Annabelle likes raw broccoli and not cooked, so if I roast some I usually try to save some on the side for her. I mean, why not..?
And don’t be afraid to TALK about food, how healthy food will help their bodies, about the vitamins and minerals etc in the food will help them grow and get strong. Educating them is my #1 tip. It’s never to early to chat about that treats are ok in moderation, but the bad effects of sugars and the importance of eating good food most of the time.

I know yall are dying to hear what I threw into this salad! 😉
As with most things of my “recipes” – just do your thing! If you want MORE of something add more, if you want less or don’t have something at home substitute with something else!
You can add blueberries, grapes, red apples, different kind of nuts etc and make it a great well-rounded go to salad!

1 big head of Kale, taken off the stalks and chopped (rough or finely, however you prefer it)
2 big carrots grated.
1 finely sliced bell pepper. (I did a yellow one for pretty color)
1 granny smith apple thinly sliced.
1/3 cup almonds.

1/4 cup dried cranberries or blueberries.
3/4 cup sliced strawberries.
I topped it with a little crumbled goat cheese.
Dressing.
3 tbsp Extra Virgin Olive Oil
2 tsp apple cider vinegar (or white)
1 tsp honey
1-2 tbsp Dijon mustard
salt, pepper, and garlic powder to taste

Make the dressing in a bowl or a mason jar.
Add the kale and carrots in a big bowl, add the dressing to it and “massage” with your hands for a few minutes and let it sit. I put it in the fridge for 30-40 min before adding the rest of the ingredients to it. The dressing will soften the kale some and I like that, but you can certainly eat it right away!

I served it with a grilled London Broil seasoned with Montreal seasoning.
It was the BOMB!
Healthy food can be so quick and good. I don’t know who came up with that healthy food is “plain?” Because this is nothing plain at all!
