Are you a pudding fan?
I am, and my girls are too. So I LOVE this simple and a lot healthier kind of pudding. You can change it up and make it so many flavors too.
Last night as I was preparing my coffee so I can just start in at 5am in the morning – I decided to whip up some pudding too. Preparing it the night before is so simple for the next day to just grab, go and enjoy. I know you appreciate quick and healthy snacks as much as I do!
I mixed half a cup of unsweetened vanilla almond milk – but any milk works – with a small teaspoon of raspberry jelly – again, any flavoring works here too and I’ll give you some suggestions at the end. And one big heaping tablespoon of chia seeds.
That’s it! shake it around just adding the lid to the jar and put it in the fridge until you are ready to eat it the next day. It will last in the fridge up to 4 days – depending a little bit on what you add in there.
So here are some fun things you can add to it! Sometimes I blend fresh berries with the milk before I mix the chia seeds. Especially in the spring/summer when the fresh berries are a lot cheaper.
You can add some cinnamon and apple sauce.
Cinnamon and a few spoons pumpkin puree.
Raw cacao and cacao nibs.
Bananas and honey.
Play around with it and see what you like.
The texture look a little scary, and my daughters were very sceptical to it at first. But now they really like it!
I also LOVE to top it with things. Today I had about half a cup of 1% cottage cheese that I added about half a cup of my chia seed pudding on. I also added a little extra raspberry jam on top and some crushed up graham crackers because, life is too short not to enjoy fully! This was my lunch today and it was so filling!
Chia seeds are a great plant based source of protein, has tons of minerals like calcium, phosphorus, potassium, iron, copper, zinc, magnesium, manganese, niacin, thiamine etc. Is a great vitamin and antioxidant source. Has tons of fiber and omega 3’s and is said to give you ENERGY, Help speed up your metabolism, and help with weight loss as they expand when you use them!
Other ways to use chia seeds is sprinkle on salads, toast, and I love to add them in my water with some lemon, especially if I’m craving junk as they expand and fill me up and add great benefits to the body!
